Unless you have a MIDI violin you won't be able to use Notation Composer as it "hears" only MIDI. There are some programs that say they can take audio to MIDI (and thence to notation), but it's a really difficult task - even some programs like Celemony's Melodyne Editor that do really good audio analysis still are quite lacking in the translation to MIDI. I don't say this to disparage these developers - a lot of smart people have spent a lot of time on the problem. It's just a big, big task. So we really can't recommend any audio-to-MIDI-to-notation software at this point.
