This is a good feature suggestion
In the meantime, you can add one manually using Text/Symbols (which "anchor" to a specific location in the measure) to "fake" a key signature.

And an unrelated suggestion: Arpeggios that go across two staves. This is quite common, but can't be done on Notation composer.
