Yes you can, using Part -> Display or define Part (it's right on the Menu bar
)
Briefly:
In Composer, each instrument in a score is a Staff.
A Part (as defined by Composer) can be made up of either
- a single Staff (eg. "Alto Sax 1") or
- multiple staves (eg. "Saxes" can have Alto Sax 1, Alto Sax 2, Tenor Sax 1, Tenor Sax 2, and Bari Sax staves).
You can use the Part -> Display or define part
dialog to create new Parts and designate which staves belong to them (Composer automatically creates a Part for each single staff in a .mid file that you open, or if you add a Staff to an existing song file, so you shouldn't have to do a single-staff Part).
